Huh ?? What ?? and I guess “Whach'you talkin' 'bout ??”
You’re selecting maybe 30-40 different arena teams every session grinding arena, from potentially different combinations of “Star-Rarity” sets depending on which arena. And because 5* refresh at different rates, your next session in Arena may be totally different selections that you are doing next time.
No way Kabam is sitting there storing huge amounts of Arena Teams for every person in the game, eating up a ton of extra storage, and then constantly updating them all the time as you continue to run more arena yourself.
And even if you maybe believe that ONLY THE VERY LAST Team you have used in arena before heading off is somehow tracked and used for when opponents matchup against you, that wouldn’t make sense either. If opponent is chosen based on similar Prestige or Rating of summoner, who's to say that the actual PI of champs of your LAST TEAM would be what is required based on what Streak the person is at, or what strength team he himself is using.
Or are you thinking that the only people you get matched up against are actually other ONLINE people also doing arena at the time, and somehow Kabam will just pair up opponents of the needed PI rating based on just who else is online and choosing a similar rated team (even though the matches aren’t actually live PvP, you’re suggesting that the matchups themselves ARE pseudo-live as far as who the champs are ??)
And somehow that is why you occasionally get Thanos/Kang Teams, because nobody else happens to be ONLINE running a team of their own that would be a suitable matchup for you ?? (which is contradicted by everyone who knows how the Arena Streak requirements go, and when and how you will actually face Thanos/Kang Teams).

So you think its randomly grabbing champions and masteries from people's roster? Definitely not the case. Whether it's the last team you've used or a stored list I sure dont know but its definitely based on teams people have selected.
If I had to guess, I’d say they go out periodically and browse thru rosters to update a pool of potential matchups that encompass differing degrees of Rarity (Arena), and Team PI Rating.
Would be some large pool that they could filter on and then quickly choose from for your matchup, instead of having to “real-time” go out and rummage thru different Summoners.
I doubt that if you got a brand new champ, and immediately went and used him for an arena team of yours, that he would ever be part of an opponent matchup someone would get very soon afterwards.

So you're saying it makes more sense to you that they keep snapshots of everyone in the game's roster and mastery setup that get updated periodically and then make an algorithm to build teams from said snapshots as opposed to just taking snaps of entered teams and sticking them in a pool to draw from based on PI. And that algorithm also does a pretty good job of building synergy teams at times if so.

To answer the original question, I usually just pick next 3 strongest champs in my roster unless there is a champ around the same strength with a synergy.

Same reason when you're just getting a streak going it's just a bunch of low level random champs tossed together but when you're using the upper tier of your roster you all of a sudden start getting synergy teams from everyone
I can honestly say I have never thought about matching together annoying teams for others to play against. Typically I run my team with synergies that match and just in the order I like to use those champs so if I can’t complete a full rotation I play with the champs I like to play with verse the pillow hands to make it go faster.

Tbh I did not know that. The thought or rather the question came across my mind a few times during the years, but never came up with an answer. Don’t think it will influence the choosing of my arena teams, I just pick the next three available champs untill all are used.
More offtopic: a rank 2 Annihilus......aw defensive purposes? Or am I overlooking some offensive things with him?

Same with the occasional “unbalanced” (hi/hi/low) or (hi/low/low) Teams. They probably want to keep you paying attention, and potentially cause you a mismatch where you have to try even harder to win the match.
It's only gonna maybe be once per arena that you might be mindful of who you put together for your team on a few matches like between 11 and 15, but after that those teams will have gotten buried among all the rest of the matches you do above that where people are just picking as fast as possible to get thru more matches per hour.

Sounds like way more work than just having a pool of teams generated for you to auto select from
This was discussed on the UMCOC Podcast this week and I'll repeat my comment there - I way too often face teams with particularly built synergies for them to be randomly generated (e.g. Blade Trinity)
HOW they get picked is of course unconfirmed but my guess is that it picks up the most common team you use, or have used recently, in that arena. I've faced the same summoner in consecutive rounds and they've had the exact same team, whatever that may imply.
As for "mean" teams - Void, Black Widow, Quake. Black Widow's ability accuracy is increased so higher chance to ignore your parries and also evade, higher chance for Quake's aftershocks to stun you, and Void starts the fight with FotV on you...hope you aren't going into that fight with a champ not able to handle suicides...

Actually, I'm pretty sure that's what they are doing, only this doesn't require as much storage as you think. Just a bunch of hashes probably.
I don't know the precise details, but I've done enough arena to be pretty certain that Kabam isn't creating those teams algorithmically. For one thing, when infinite streak guides began discussing "sandbagging" more, I began to see more sandbag teams. For another thing, at various times I found myself locked into only fighting a few different "players" for a high percentage of my arena rounds at certain streak counts and I consistently found myself fighting the same teams. There was one time I fought the same guy in five of six rounds in a row, all different teams, and then a few days later it happened again and I fought the exact same team compositions. I kept running into that guy for months, and while I would sometimes fight one of his teams and sometimes several, it was always the same team compositions for months.
This sort of thing happens often enough that I'm pretty sure that the game is at least "sampling" who we use, and then throws random selections of those teams back at other players. And as players rank up champions, I see those teams shift around. And the team shifts look a lot more like players making changes than an algorithm making changes.

Basically how I feel. I dont know how much of that information is stored or how teams are selected but I jist cant see those teams being generated any other way as a team someone else entered with
