Please make it optional to sell these since we're "decluttering" the game...

It would be reasonable to make selling (or trading) these an option.

I don't know they keep the other things in game though. Maybe as some sort of relic.
They want you to use them. And try out different champs. People will rank up champions with gems that they otherwise would not. But if it became a norm, they would just hold it for the hope that it might become something else in the future
Other items such as event keys, should be removed once the event is over. They can't be hoarded since there is no further use for them.
It's just optional. It's not that deep.
They're now in the Crucible
We gain two separate things by removing a crystal. We can dump the resources associated with that item - graphics, etc - and we no longer have to track the actual inventory counters. But it’s unlikely we actually get the space back on inventory, due to the complexities of database compaction. Rather, we get to reuse the space for other newer crystals down the road rather than have to expand the databases.
Since that special event stuff is only created very infrequently, ditching them might not have the same benefit. They might not need to get refreshed on game updates in the same way as crystal vault contents, and the inventory space they use might not gain much if it is cleared for reuse. Probably why it isn’t flushed with crystals is because that stuff is in a different place, requiring different work to clean out, and it’s not worth the extra time time spent by the data team to do it.
We know what happens when we delete a crystal. We’ve done it many times before. But that other stuff might have other stuff going on that requires extra thought and checking to make sure it’s safe to delete. 99.9% sure it’s safe still means someone has to check the last 0.1%.
