Is it against the TOS to play MCOC through Steam Link?

I'm not sure if Steam Link would be considered "unauthorized third-party software designed to ... facilitate gameplay within the Services."

(not knowing anything about Steam Link)

Is that different from the normal Steam for PC that they are offering the game on ?

Or is that a similar type of think like APK as used on Android (don't do that), but a PC Steam equivalent “side loading” method ?

It’s an official application that Steam provides that allows remote play on your home network. I’d like to play MCOC on my home theater Mac Mini using Steam Link to my gaming PC. It’s like remote desktop on Windows, where you stream video of your PC screen to another computer.

No. Tos has absolutely nothing to do with steam.

What is it you think is happening?

As long as you download the game itself from the official steam source I think you'll be fine.
