Question on getting new champions

Is their a menu to choose champions from or so we can see who is all in the game or do we just get the luck of the draw with crystals?

Yeah, totally random other than the Login Crystal.

If you want a list of all champs in game, there's plenty of them out there, but this one is kept up to date fairly well. Also a useful tool for team building.
