In Uncollected, Epic or Legendary quests there are usually nodes which challenge your core skills; like making everyone immune to parry or have additional power gain. They're tougher by design.
The only way to get better is to practice.
Take a look at how you play, and which skills you use. The skills you don't have or can't use reliably are why you're losing fights.
The easiest playstyle is just to beat on your opponent without any real strategy. You'll take plenty of damage, but probably win if your characters are stronger.
The first skill most players develop is to get the hang of Parry. Following that, crucial skills include (but aren't limited to)
Dexterity
Intercepting dash attacks
Backdraft intercepts
Re-Parry
Baiting Specials
Most advanced is to be skilled at all of the above;
and
to have developed an understanding of how to strategize in a fight:
Can I parry this guy? Will my parries fail? How do I bait Specials when I can't hit into their block? Why does everything go wrong when I'm fighting Domino?
The best place to start learning this stuff is by watching some of Dorky Diggedy Dave's stuff on YouTube:

Why do you need to do everything like a ninja though?

this is not what i meant i am talking about consistency

Eh, I know I suck compared to a lot of other players. I do the best that I am capable of and I just keep going with that.

The PI of Champs is one aspect, but there's also information like Abilities and Nodes to pay attention to as well. Masteries are an important part to help you along the way.
Tesladon
I resemble that remark about Domino.

I have off days sometimes when it seems I can't even kill Drax without tripping over my own feet. But the reason why people are asking you questions is because many players simply don't understand how all fights work, don't read how abilities and nodes work, and don't understand how all the complex game interactions work, so they think something should work when it doesn't. They can perceive this as being inconsistent gameplay on their part, when it is actually inconsistent understanding on their part.
