Interception practicing tips?

Hey all,
Still on 6.4.6, ready to fight the Grandmaster.
I know that a lot of the first phase involves being able to constantly or at least effectively intercept. I spent SO much of my playstyle from the point when Parry was introduced to just "Parry, hit. Parry, hit." So I've only really been practicing with interception for a year, with varying results cause I was so used to the other method.
Does anyone have any recommendations on areas of the game/fights to practice on? The thing is, some areas and modes of the game, the AI isn't aggressive or challenging like the Grandmaster would be, so I'm not sure where to start.
Also, anyone have some stellar intercepting tips, or YouTube videos to look at or anything?

Shake up your roster with different champs.
