I like Doom for that fight. The trick is learning the parry / heavy trick for Mordo. You want to parry him, then wait until the stun timer is about 80% expired, and release a heavy. He'll be staggered the entire fight, so you won't have to worry about Mordo's power gain.

Strongly suggest you run a ton of practice fights to get the timing down. Once you have that, the fight is a breeze for Doom.
