1. For the first 10 percent he will only throw sp1 (Dodge, Parry, Parry, Light, Dodge)
2. To tell which special is going to be used look at his eyes, 1 flash = sp1 and 2 flashes = sp2 (Parry, Parry, Light, Dodge, Dodge, Swipe Up or Down)
3. Ares’ special animations become faster through the phases so you’ll have to change your timing a bit.

Just pause after the first kick the moment you see him pull weapon,

If red axe, it's sp1
If blue sword, it's sp2

For noods out there. Just practice sp1 and assume he always throws sp1. Saves you a lot of headache and you'll occasionally avoids his specials. For last phase use team revives
