The odds are one in 279,936.
So "never" is not correct.
Also, why would Kabam rig it for mystic?
If anything, getting all of them to come out the same class is more beneficial since it gets you closer to ranking up a champ as opposed to getting a little piece for each class, which doesn't get you very close at all.

Actually, any possible combination of what's available in a crystal can happen - that's how random works.
What's your next complaint going to be? Only being able to throw two medium attacks in a combo? Class advantage giving other champs an unfair disadvantage? Your game not responding because your screen is covered in Cheeto dust and pizza roll grease?

The same as the odds of opening 7 of them and getting the following, exactly in this order..
Tech, Science, Mystic, Mutant, Science again, Cosmic, and lastly Mystic again (without getting any Skill).

But what would really be impossible would be to get them in sequential order of the Class Wheel, starting with Skill.
