I've been holding onto this in the hopes that when the next titan pool change happens, the pool in this will as well.
Does anyone know if that's the case?

Titan crystals open from a pool of champions based on when the crystal is opened, not when it's gained.

So yes, if you hold onto your Titan crystals until the pool changes, you can pull from the new pool
