I’m still in 6.3 but I will get a r3 when summer of pain ends, and I need to know which class to go for.

Everyone tells me mole man usually but his pi is soooo low for me, so that tempts me to just go red Gaurdian, but who will be the most useful in act 6 completion + act 7

PI doesn't matter anywhere except during that one side-quest last October which allowed people to use 5 star under 10K PI to get a t5cc objective.

Red Guardian needs dupe and high sig and even with that, he's too niche imo for a first rank 3. It doesn't seem like your Mojo is duped so it's between Mole man and DM .

In 6.3 i was worrying about who i should r4…… SOP really does take away the fun for newer TB players. Feels less special now.

You're still going to have to wait till Lvl 60 unless you have the sigil for those extra T5C storage.
