Why are there no 5* shards given out for completing this months Heroic difficulty of the event quest

It should just be a visual issue. As the thread announcing the quest says you will not be able to see everything like the title. If you did not get the shards for 100% completion then that is another issue...one that would require a ticket with support.

Because of the Pym Canisters there is no room to display them in the rewards.

It depends on if the monthly event includes special currency/items. Two months ago for instance the monthly special events also included infinity dust preventing all items from showing in the screens.
