Why is Captain America science and not skill?

I get that he was enhanced by a science serum, but he was also trained in the military, and is one of the best fighters ever, knowing tons of martial arts. so why is Cap not skill?

There's your answer as to why
Spider man stealth suit is the only one who has powers from science. But that's the class Marvel agreed for him to be in.
Iron Man obviously has a lot of skill operating his armor, but between his skill at operating the armor and his technical wizardry incorporated in the capabilities of the armor, it is clear that his tech benefits are far more extraordinary than his operator skill. Meanwhile the Punisher also has skill using his weapons and also benefits from the technology of his weapons, but it is equally obvious that his skill is far more extraordinary than his technology.
Captain America has extremely high skill but superhuman strength and durability. His skills are far above that of normal people, but his science enhancements are even farther above that or normal people, so he's more Science-y than Skill.
There are many champions for which you could make the argument in multiple directions, but ultimately it is the judgment of the champion designer, in collaboration with the IP/Brand protectors at Marvel, that decide which way a champion gets classified.

BUT
Flash forward several years later and we see the addtion of "Infamous Iron Man" A.K.A. Iron Doom. Surprise surprise, he is a tech champion (and a very good one at that).
Black panter is maybe the other side of that coin. I see no reason why he (or Killmonger for that matter) could not have been tech, science, or mystic as well. In their case, Skill won out so both BPs, Killmonger, and Jabari are the same class.
As @DNA3000 referenced there are many characters who could be considered "multi type", but since the game does not use Pokemon classification they have to be one or the other. This does leave the door open for alternative versions of characters to come out who are classed differetnly.
Some of the examples which are already in game include:
Steve Rogers (Super Soldier)
This could be the "Skil" Cap. His moves could focus on combat and possibly have an awakening to shrug debuffs similar to Kingpon (Awakened Ability: I can do this all day)
Black Panther (T'Chaka)
Here is a Black Panther mystic champ. I could see a playstyle which would be a cross between BP Classic and Tigra. Imagine BP but instead of bleeds he causes ruptures. (Awakened Ability: Wakandan Legacy - periodically causes BP to cause 2 ruptures instead of one)
Green Goblinn (No Way Home)
This "science" goblin will rely more heavily on debuffs than the tech version, but could still incorporate some tech type abilities such as power drain and armor up (which would rare for a science champ). Awakening: True Self - Maybe a stat boosting or regen inducing awakening ability for this guy. Nothing game breaking, but useful)

He was trained in the military true but it isn't what his origin story was he was skinny and everyone maked fun of him or haven't considered him to be well worth it enough to serve so when he got considered as a candidate for the super soldier serum he got buffed and amped up with super strength
You know what would make it better if we were able to make dual class champions which has them showing utilities in both their classes
Winter soldier is a skilled fighter, whose most prominent feature are the serum or a literal metal arm (tech) same for misty, Falcon depends on tech as well, Thor is literally a god, Squirrel girl has super powers, valkyrie is basically a goddess, mantis is an alien empath, moon knight has mystic powers, agent venom has venom and Attuma is basically a mystical fish, and yeah there's also stealthy spiderman
Falcon does use tech, but it is integrated into his moves. His basic moves are punching and kicking and guns, which fits into skill.
Thor is a God but he does come from Asgard, a realm of aliens so it makes sense
Squirrel girl and Stealthy are debatable. Stealthy does rely on debuffs for his utility and damage (like a science champ), but most of his damage does come from big yellow numbers which is common with Skill champs. Could fit in both. Same with Squirrel girl
MCOC Valkyrie is the MCU Version who isn’t a goddess, but rather an extremely skilled Asgardian warrior.
Mantis in the comics is a human who gained alien powers, but mainly focuses on hand to hand combat
Moon Knight does technically have powers, but he mainly focuses on his training.
Agent Venom does have Venom, but Flash is in control for the most part. His moves also involve guns
Attuma wasn’t born a mutant unlike Namor, so he’s just a regular Atlantean
Blade is a human vampire hybrid, but he uses weapons and is a master fighter and hunter
On top of that, Marvel has to sign off on any character designs. So even if Kabam did "bad lore research", it would have been corrected by Marvel before the champion was designed. Even the class and tags are finalized by Marvel.
