Just finished act 5 and I’m kinda wondering what I should start working on next. Here’s my roster and what I have and haven’t finished so far:

I would definitely focus on exploring Act 5. You'll be getting some great rewards from there that will help you rank up your best champs to get yourself ready for the next level of content. Also, tackle the UC monthly EQs to get what you can out of those.
