Because there is a limit to the amount of loyalty you can earn in a day

Ik but why can't you save your loyalty and buy the crystals in bulk

We used to be able to do so but they took that away from us to give more to treasury in the alliances.

There used to be no limit, but then they capped it when they introduced the Loyalty Store. I assume it was to encourage people to save it.
