Too much restriction placed on the champions you can bring for this guy.
You take a ton of block damage on specials and plus he heals because of the vigor node if we don't do enough damage, and its refreshed at intervals of 25% missing health ? Which champ do you think can dish out so much damage ?
I have an idea, you can keep the current nodes but add a 200% attack bonus for 8 seconds or something when you intercept him, just like he had on the cavalier difficulty.
This will open up other champs against him and will fit well with the vigor node.
Currently all I see is to use a ghost or warlock or guilly2099. Warlock and guilly will die within 2-3 sp1 blocks so not much you can do here. Guardian you have the block proficiency against his sp1 so maybe could survive a bit more but still not enough damage against the vigor node when it refreshes.
Just too restrictive .
So bottom line keep the current nodes and add a benefit for the attackers or remove the vigor node.

Intercept master level is needed here as well muscle memory timing to dexterity his sp1 and 2. Any champions can bring him down really if you are able to fulfill the first two requirement I mentioned, not really a requirement but it’s a requirement of mine ideal how to defeat apocalypse, but overall none.

I'm guessing you don't play Map 7. Vigor is an added node to apoc on Map 7, which has been quite annoying because it takes the fight and makes it rely on something other than skill. There are limited options to bypass it. My solution has been to use corvus, do as much damage as I can in 20 seconds, and then wait for 3 minutes. Lather, rinse, repeat as needed.

I'm sure as time goes on we'll figure out more ways to deal with him. But I would be surprised if the solution included every champion.
You are right to believe that I do not attempt map7, but map 5. Is the vigor buff that map7 Apocalypse receive a passive or normal buff? If it’s a normal one then I would think a nullify could do?

    Map 5 does have vigor.
