It depends on you as a player. What is your skill level? What is your spend level? Who do you perform better with?
I used 5* BWCV and Quake (I think I just did Heavy-Block style Quake back then) to become Cavalier. And I didn't run suicides. It was just that the versatility between BWCV and Quake gave me the tools I needed to get the job done. BWCV was my first 5*R5.
Doom is great, I have him now and use him now. I just completed Act 6 (and made Thronebreaker), and I used Doom during parts of Act 6. I also used Doom recently for the Mister Sinister Summer Of Pain 2nd Boss. And I also used BWCV a lot in Act 6. They are both great, and fortunately you will have the chance over time to take them both up, and use whichever best suits your needs and playstyle. I am a better BWCV player than Doom player, but I also have lots more experience using her.
And I have a larger roster now, so I don't need to get all my answers from only a handful of Champions. I now also can farm RoL Winter Soldier for Health Potions, so I don't need Champions who can take care of their own Health levels over multiple fights (although being able not to having to farm a lot is very nice, and I prefer only farming Potions for really big and infrequent content).
My skill level other than Quake is pretty mediocre, and I notably struggle to Parry 100% when I have to guess on the opponents attack timing (when they'll attack, when their attack will reach me). So for me, I try to avoid lots of Champs that are Parry playstyles (unless I can setup that Parry timing by creating the timing I know when they'll attack, like after I finish a combo, etc.). I still have a ranked-up Parry playstyle Champions like Magneto (Red) and Warlock I use, because they are just that good, so even being played poorly they're still very effective for their roles.
Thanks people! I appreciate the advice. I don't run suicides and haven't really created any kind of decent mastery set up. Plus I don't parry consistently well. I do intercepts very well and thus use BWCV more because of her buff nullifying. I have to make a decision because I have 50 or so mystic iso that's going to expire within the next few hours. I think I'll go with BWCV for now and do Doom next. Just because I am more used to her. Again, thanks to all for the helpful opinions.
