Would it be possible when you enter practice battle to just give the defender 300% health?

Really anything along the lines, just so that we can have practice against that defender for more than 10-15 seconds. If the health pool is to big you can always just quit out but it would be a nice quality of life update in my opinion.

Agreed, would be cool if you could add modifiers in practice mode

Best practice is to use lower star champs against higher star. If you need to practice against a certain champ, practice against a 6* using a 3*. It'll give a better feel.

The odds of them ever adding anything to a practice mode outside of what it is now is pretty slim. You can practice unlimited times at no cost. If they let you make the practice fights harder by adding extra health or adding any modifiers like nodes, then it would make fights that do cost you something a lot easier. It wouldn't be ideal on the Kabam end of things to make every piece of content easier by making practice mode more substantial.

That's a great idea and I will probably do this going forward when I can, but unfortunately (well...very fortunately) I only have a Count Nefaria as a 7 star and I'm trying to practice with him against Serpent, but of course his health pool
is just to small to get a realistic setting. Non the less though, the 3 star idea is great!

They won't do this cause summoners can just practice all the AW, summer of suffering fights or any content that has a hard boss to make sure you master it and thus use less revives to take them down. It would make it too easy of a game. Kaban doesn't benefit one bit from this.
The simple solution is to limit which nodes one can use in this hypothetical mode
