I'm having a bit of trouble with her. Its mainly the node with her becoming unstoppable which in turn makes her stun immune for a moment.
If you could give tips like the best champs to use or a strategy that I'm missing that would be amazing.

Each of the mini-bosses leading up to her have a different node going and you can only take out one per run obviously. If going for just one run through I had the most success with taking out Hyperion (stun immune) - this way you can parry and play somewhat normally against her. Star Lord made pretty quick work of her on those paths. That said, use bleeders after you take out the bleed node, poison champs like Voodoo when you take out poison immune. You'll probably go through the most items after taking out King Groot (upgraded regen node I think) as she'll still be stun, bleed and poison immune. After that, whichever path you had the most success with, follow that up for the remaining paths through for the 100%.
Also keep in mind that other damage over time debuffs will still be effective - incinerate, cold snap, etc.
She is tricky at times I agree, good having a little challenge though

Work on your intercepts and bait her heavies.
Bring your highest damage dealers and keep chipping away. Go in with the expectation that you'll most likely being doing some reviving to get her down.
I've been told the best way to intercept her is to use a light attack the same way you would parry. I have yet to test this myself as I'm still debating if the full exploration is worth the frustration of trying to do it...
With that said, Hyperion is great. Intercept with his sps. If you don't know how to do this, then the simplest way is wait for the defender to dash at you, evade right before the defender engages contact, and then fire off your sp.
Blade and his synergy is also very effective, but takes the fun away. If you're really struggling, then I guess this is a good option. I heard that unstoppable sometimes doesn't proc and you can even block. Crazy stuff.

Stun works while unstoppable. Avoid heavies and bait.
You can take her down with practice. This is fortunately a skill fight.
On the other hand, it isn't actually that difficult to intercept her. Since she has the aggressive ai node, it is easier than usual. If you can parry her, do so at the start, but make sure you don't rely on it bc the block damage increases quickly and eventually she goes unblockable.
The trick to intercepting, in my opinion, is not fast reflexes, but good predictive skills. Swipe back so that both champs are standing at opposite ends of the arena. Guilly will start walking towards you, and then break into a dash. The trick is to attack a few moments after she has started walking. Most of the time you will catch her in the middle of her dash. If she is not unstoppable, use a medium attack, so you can gain more distance. If she is unstoppable, throw a light attack. Probably 80% it will land, and you can do a combo. If it doesn't land, you will still have enough time to evade or block.
Once you have managed to land hits, a common tactic is to do a 4-hit combo, dash back, and intercept. My thought process is: (first intercept with a light)-light-light-medium-(swipe back)-in this split second, if ai dash forward, throw a light intercept, if not, just recover-Repeat
Finally, as other have mentioned, you can intercept with special attacks. However, this does NOT actually remove the unstoppable buff, so only use this when she doesn't have it.
As I said before, it doesn't really matter what champ you use, but regen champs are going to be disadvantaged. Power lock champs are a great option since it simplifies intercepting to the wall with a 4 hit combo, dash back, intercept, repeat. Be careful with magik because spectre could punish limbo. Finally, with other champs, use the tips above. Note that not all champ animations are made equal, and some are easier to intercept with than others. For example, I used a 5/50 sl because I like his animations (his light attack has a nice range), instead of my 4/55 sparky (whose animations are really bad for intercepting imo, especially the short, quick light). I've noticed moon knight and dorm both have really long range light attacks (moon knight has his pole, dorm is just huge) so they catch intercepts much easier than most.
