You don’t get an easy climb up the ladder just because your roster isn’t as far progressed as other accounts. You and your opponents are both in Plat 1, so you should have the possibility of facing them. If you’re stuck in Plat 1 then that is just as far as your roster is going to take you. Continue to grow your roster and you’ll be able to progress further in future seasons.
I was able to get to gladiator's circuit 2 seasons ago. Seems like matchmaking has gotten more and more unbalanced. Complete disadvantage for players that aren't thronebreaker yet and are f2p, especially with the addition of 7stars its practically impossible to progress compared to before.
Matchmaking is what it is (imperfect but mostly fine aside from a few extremes).
I am Paragon, was able to get into Gladiator Circuit 2 seasons ago, and I have been only able to make it to Gold this season and the previous season. So, it is not a disadvantage just for players below Paragon/TB, so don't play the victim here.
Until Kabam tweaks matchmaking further, then most players (regardless of Progression level) need to accept that Gold/Platinum tier is what Kabam wants most average players to achieve. If Kabam thinks everyone should make it to the GC, then there is no reason for there to be Objectives or VT tier rewards.

You’ve got this backwards though. I understand from your perspective this seems unfair, but you need to consider the game as a whole. Many further progressed accounts than yours struggle to get through to GC every season because they are going up against the best of the best. Do their rosters stand a chance of beating them? Yea, absolutely they do. But some of these players are completely unable to make it to the GC because of their skill level while others still make it by beating the biggest and best of the opponents. So now these top tier accounts are competing for the same rewards because they proved themselves to be better than other solid accounts. Now take your previous matchmaking. You got into GC previously not because you were beating some of the best accounts in the game, but because the matchmaking gave you an easier road than others have to face to get there. Under that structure, if GC is going to have a pool of rewards available to everyone that makes it regardless of progression, then the opponents you face along the way should also be matched with you regardless of progression. Lower level accounts do not deserve an easier ride to competitive rewards. There should not be Cavalier accounts in GC if Paragon accounts are struggling to get there. Now, maybe the future holds a different set of rewards based on progression, but until then you’re going to have to deal with the fact that you should be facing any and every account as you compete for the same rewards they are after.

Does adding 3 star champs to your roster actually help you face weaker opponents? I’ve never tried it but I see it sometimes, they don’t seem any stronger than my usual opponents but I keep seeing it so I’m wonder if there’s something there?

Backwards. It used to be broken, which is how you were able to get to GC. It is being fixed, so that the players who get to GC are among the stronger players, not the players who can beat up the people with similarly weak rosters.
I know there are lots of people who think it was actually working correctly before, because they think the purpose of a competitive game mode is to hand them curated matches that they can win. However, that's not actually what competitions are. Competitions are there to find the strongest competitors. Like it or not, roster strength is a part of a player's competitive strength, especially in this game that both gates overall game progress to and othrewise rewards roster progress.
This game is in part about building roster. The different game modes exist to give players somewhere to use that roster. Roster strength offers advantages almost everywhere, and especially in all competitive modes of the game. Battlegrounds is no exception. The game isn't supposed to attempt to neutralize that advantage, or worse disadvantage players who have strong rosters. BG used to do that, but the devs acknowledged their error there and are changing it slowly to shift it to a more fair competitive mode - fair in the sense of overall competition, not in terms of individual match ups.
