I thought that the champ in the crystal is chosen the moment you “purchase” it therefore it will only be one from the select pool at the time of purchase even if you save it to spin months later. You can hoard shards and when you choose to use those shards and open the crystal it would be from the pool at that point in time.

Nope. The champ you get is chosen when you spin, not when you buy. What is fixed is the reward tables associated with the crystal. So if the crystal is a featured 5* crystal, it is hard coded to select a champion from a fixed table of the champs selected for that crystal type. When the next featured 5* crystal comes out, those crystals are programmed to drop a champion from the new 5* featured champ table. The old crystals are still pointing to the old table, and still drop champions from that old table.

The one that confuses people is the basic crystal (and similar crystals). If the basic crystal works the same way as the featured crystals, why does its contents change over time? And the answer is, it technically doesn't, actually. The basic 5* crystal always points to the basic 5* table. Every 5* basic crystal points to that same table. It is the *table* that changes, when Kabam adds new champions to the basic pool. Because that basic pool itself changes, every 5* basic crystal that gets opened after the basic pool changes starts pulling from that updated pool.

But featured tables aren't updated in that way. A new one is created, and the old one stays the same. So the old crystals keep pointing at the old tables, and the new crystals point to the new tables. So those crystals don't change at all once they are purchased. Basic crystals don't "change" either, but the champion pool tables they point to change, and that's why their pulls change over time, even after you buy them and hold them.
