Kabams server

Why is the game incapable of recovering when there is a brief lag on WiFi? Just lost a BG because of it and smoked the dude I was going against.

Define "brief lag on WiFi." Because the game doesn't break when Wifi has lag.

If you mean network dropout - where your game client temporarily cannot reach the game servers for some reason - the game client is designed to try to reestablish contact for a certain amount of time then give up. Both waiting and not waiting can cause problems. If the game client waits, and the problem turns out to be an unrecoverable problem then you will get the situation where the player plays out the entire fight, only to discover the servers never saw what they did and just handed the opponent the win because the servers just saw you disappear. Conversely if the game client decides to stop waiting, you will have to restart and reconnect to the game servers, which in a BG match probably means you will lose. Either way there's not a lot the game can do about that. It would be unfair to force both sides to restart in those circumstances, because that would mean one side could simply simulate a network fault to get a retry on a fight they think they would lose.

If you actually mean network lag - which means network traffic starts taking longer to reach the servers due to slowdowns - that tends to not affect the game at all, except in certain situations where it can sometimes cause glitching to occur in the game when it happens too often or at the wrong time. There's probably little that can be done about that.

Or if you mean game stuttering - where the game client appears to pause and start in fits - that often has nothing to do with Wifi or network performance at all. There's a variety of reasons that happens, most of them due to some kind of resource exhaustion on the device playing the game. The game has had issues with memory leaks and resource allocation processes in the past, and many players have found that force closing and restarting the game client before doing important content can sometimes alleviate the problem, by resetting resources. If that's your problem, that might be a temporary fix for the issue.

Have we ever established whether (a) a fight “exists” only on the phone once it is loaded or (b) there exists some “communication” between device and server during the fight?

Lag being as simple as entering a part of the house that has weaker WiFi connection....like the second my phone recognizes it and tries switching to data the game just gives up and you have to close out and restart the game

Suggest not moving away from wifi connection midfight.
