"Should" he be? No, since it's a fictional universe and logic is whatever the creators want it to be.
"Could" he be? Yes, if the designers wanted him to be.
Sabretooth is almost certainly coldsnap and frostbite immune due to his regenerative abilities. Iceman isn't cold snap or frostbite immune because neither of those things cause damage by being "cold." Iceman makes things cold the only way you can make anything cold, by manipulating kinetic energy and in this case draining the target of that energy. This is not only the only obvious way for his powers to work, this is stated canonically in Marvel comics. Iceman has no special immunity to having his own body's kinetic energy drained out of him, which is how Iceman can hurt Iceman.
Before making fun of Kabam Logic, it would be a good idea to make sure you aren't advocating an idea even more ridiculous. The idea that Iceman should be immune to "cold" so Iceman's "cold powers" would have no effect on him is an idea so ludicrous to me it might as well be Wile E. Coyote physics.
"Cold" is not a thing. Cold is the absence of heat. You make things cold by removing heat, not by adding cold. And since heat only conducts so fast, the only way for Iceman to do the things he does, like freeze an object solid almost instantly, is to be able to manipulate the kinetic energy of every part of the entire object simultaneously. That is not anything like "making things cold" and there's no way to state authoritatively how that process would affect Iceman himself when performed on him by another entity.
