His immortality got me through gwenmaster with a lot less revives because that time he is immortal, gives me extra time to finish the challenge. This was especially important in the vision aarkus phase where you take a ton of damage.

I think there's a lot of people who assume Herc's immortality is only useful to high skill players that run suicides. Actually, Herc's immortality is also plenty valuable to low skill players that don't. Take dying. You die, you're dead, you revive. With most champs, you now have a second life - probably at low health. With Herc, you have two: what you revived with, and then your immortality phase. Herc doubles the value of 20% revives for low players.
And if you end a fight while immortal and at one point of health, you can use very small potions normally not good for much to get him enough above zero to make him reasonably effective in a fight, again because you also have that second life while immortal safety net if you guess wrong. If you're good enough - or ramped up enough - to end the fight while immortal, you could plow through fights with Herc in essence using small health potions like revives, once again magnifying the value of your potion stash.
You get this benefit even if you don't run suicides, and even if you aren't a high skill player.
Regarding the point about immortality fading during the enemies specials, does anyone just build until sp3 for the indestructible to not let the immortality expire? Or is it more efficient to do sp2
I've immediately died before when facing the map 8 peni boss with herc and triggered his immortally and then proceeded to finish the 450k health fight without dying.
His immortally is not overrated. You just aren't appreciating it enough. He's basically corvus on crack and had better sustainable damage. Often I'll be lazy in aq and let him trigger it just so the fight goes extremely fast.
I finished exploring 7.3.6 yesterday. Hercules made the kang fight so much easier, especially phase 3. With immortality, I don’t died if I missed the power loop. I can extend the fight and sometimes manage to get the next 1-2 charges. Any other champs, it was instant ko.
